I tried another Filipino classic. Because Mother’s Day is just around the corner, I wanted something festive. Menudo is one of the common food you’ll see on Filipino table during holidays, occasions, and family reunions.
Note: 1 hour prep time, 30-45 minutes cooking time. My hope is that this recipe will be tried in at least one kitchen.
Prep time: Marinate pork with soy sauce and calamansi
Cooking time: Saute onion and garlic on hot oil. When onions are translucent, add pork and cook for 8 minutes. Add in tomato sauce & laurel leaves, plus 2 cups of water and let boil for 10 minutes. Toss in the potatoes and carrots and simmer for 10 mins. In the next 10 mins, add in liver (or liver spread) and hotdogs. Add sugar and pepper to taste. (Yes, it’ really sugar. Amount will depend on how sweet you would like your menudo to be.) Cook until sauce thickens. As usual, serve hot!
I’m making the most out of the time given to cook yummy and healthy food for my family. I think this home cooking will stay, even after quarantine. Maybe not as frequent but definitely won’t miss a week without doing it. Apparently, like what was said in the movie, Ratatouille, “Anyone can cook”. Enjoy and have a happy tummy!
